Oakwood Fire Pizza is more than just a food truck; it is the culinary creation of Chef Tom D’Ambrosio, co-creator of other delicious food trucks such as Aioli Gourmet Burgers and Modern Tortilla. Tom and his partner, Kyle Hollebeck, started off with a single truck and eventually grew into a full-on catering company here in the Phoenix valley. Since 2018, Oakwood Fire Pizza has used Chef Tom’s Italian upbringing and Kyle’s Chicago influences to create the perfect pizzas. Oakwood Fire Pizza continues to celebrate our successes as being the best pizza in Phoenix, Arizona and one of the top catering food trucks.

Oakwood Fire Pizza not only wishes to serve the best pizza in the Valley but also with the freshest ingredients around. Our authentic dough and fresh ingredients create the perfect pizza, which is cooked within 90 seconds with our wood fired oven. But eating this pizza is only half of the incredible experience. See our chefs in action as they prepare each made to order pizza step by step—from tossing the dough to drizzling our delicious sauce. Our guests love to finish off each meal with our hand tossed salads and freshly baked sides that create the pizza food truck catering experience.

Tommy D’Ambrosio

Executive Chef

Chef Tommy D’Ambrosio is a graduate of the Culinary Institute of America and has over a decade of a fine dining experience. He was also crowned Chopped Champion on The Food Network in January of 2019 on the episode Tacos & Tequila! Being born and raised in Arizona, Chef Tommy was happy to come back to his hometown and start, own, and operate one of the fastest-growing food truck experiences in Arizona, Aioli Gourmet Burgers & Catering. Chef Tommy has also lead the Aioli Gourmet Burgers Brand and his second concept Modern Tortilla Brand into the winners’ circle of state & national competitions such as Arizona’s Burger Battle, Phoenix Devoured, and Scottsdale Culinary Classic Events. Oak Wood-Fire Pizza started with the idea of bringing handcrafted pizza with simple ingredients to the valley. Chef Tom plans on taking his third concept to new heights!

Kyle Hollenbeck

Owner/Director of Operations

Kyle is a founding member and Director of Sales for Aioli Gourmet Burgers and his second concept Modern Tortilla. Growing up with the other two partners in the Shadow Mountain area was a big reason Kyle wanted to have the first Aioli Burgers location near the school. That is also why he was passionate about starting Oak Wood-Fire Pizza. His home town needed something new and fresh that was simple to provide. He will help work with you on any food truck or catering bookings! Kyle wants to always make sure you have the best experience when having Oak Wood-Fire Pizza cater your special event.

Vivianna D'Ambrosio

Director of Event Sales and Restaurants

Vivianna D’Ambrosio was born and raised in a large Italian family in Westchester, New York. She started cooking with her grandmother in the kitchen at a very young age which sparked her passion for food and cooking. She graduated from The Culinary Institute of America and worked under some of the most talented chefs but she soon realized that she had a deeper passion for the front of house operations. She moved to Arizona with her husband Tom D’Ambrosio and continued to work at resorts in the valley which eventually led her into event planning and sales. She is excited and eager to create your next food truck event!

Paola Valenza

Administrative Assistant

Paola is the Administrative Assistant for Aioli Gourmet Burgers. Her position encompasses everything from human resources to customer service. She personally makes sure that each client’s expectations have been met with each event.

Brandon Johnson

Sales & Marketing Manager

Brandon Johnson grew up in the metro Phoenix area and has a deep passion and appreciation for the Valley of the Sun. Before coming to Aioli Burger, he spent much of his career in digital marketing and sales. From content creation, New York trade shows, to creating storyboards.
Branding, graphic art, and collaborating with local businesses has come hand in hand with his education in Media arts and his accomplished marketing and business development background.
Outside of work you can find him hiking every mountain, peak or canyon in this great state.

Matt Calamia

Sales and Lead Generation Manager

Matt Calamia is a Phoenix native, raised in a large Italian family and graduated from Arizona State University with a Bachelor's degree. Matt's passion is in education but he is taking a break from that to join the Aioli Team. He enjoys working out, hanging out with the family and is a former college athlete. He is also a huge fan of the Cubs and Packers. Matt is super excited to plan your next food truck event!

Jayson King

Sales Manager

Jayson is a Sales Manager at Aioli Burger and our family of brands. Prior to joining the sales team, his family was invested in multiple restaurants throughout the Valley. Through that time, he's built many relationships growing a better understanding of the industry. Always ready to lend a helping hand, and make your event a success!

Sean Martin

District Manager

Sean Martin was born in Connecticut and then decided to move to the Valley in 2010! Sean lives here with his beautiful wife, son, and sweet lab/pit mix pup! He has been in the food and beverage industry for 18 years and always loves the rush that the industry brings, which is why he always finds his way back in the industry. When he isn’t working in the kitchen, Sean loves to work on his golf game, grilling while enjoying a Hazy IPA, or watching James Bond.

Kris Levitan

Sous Chef

Kris Levitan was born and raised in the Valley and has been a chef for 16 years! During his time as a chef, Kris moved to New Orleans to further follow his dreams and now he’s back here to bring his passion for food back home. He loves working in the food industry because he believes that creating great food and culinary experiences is one of the most rewarding things we can do for one another. Outside of work, Kris is an acrylic-abstract painter as well as playing the saxophone and hanging out with his dog, Laika, and his cat, Dexter.

Sonoma Sanders

Digital Marketing Specialist

Sonoma is a California native who moved to Phoenix in 2021. She graduated with a degree in photography and has always had a passion for creating visual content. The food industry is always so exciting and never boring which is what she enjoys. Her photography background is going to bring a fresh new take to the social media pages. Outside of work she enjoys being around friends and trying unique sour beers!

Oak Wood is about bringing Wood-Fire Pizza too your home, wedding, private party or company meeting! We have a mobile pizza oven and are perfect for late night snacks and much more. Chef Tommy can compliment his amazing pizza with Pasta, Bruschetta’s, salads, charcuterie and cheese boards with cannoli for dessert. We can offer a simple menu of pizzas for speedy service as well as a customizeable menu for whatever occasion you are looking for.
